Ingredients
- •500g Wheat Flour
- •200g White Sugar
- •1 Bag of Vanilla Sugar (or some vanilla extract)
- •4 Whole Eggs
- •1L Semi-skimmed Milk
- •50g Melted Butter
- •12g Coarse Salt
- •1tsp Rum (1cL)
Instructions
Crack the eggs into a bowl
Add the sugar, salt, melted (and cooled) butter, vanilla sugar, rum (or cinnamon)
Whisk vigorously as you would with an omelette
Add 50cL of milk and whisk again
Gradually add all of the flour while whisking with the other hand
Once the flour is mixed in, gradually add the remaining 50cL of milk
Let the batter rest of 2 hours at room temperature
Heat a non-stick pan over medium heat, lightly grease with butter or oil
Pour a small amount of batter onto the pan with a ladle, rotate the pan to coat the pan evenly
Cook until the edges start to lift and the bottom is lightly golden, about 1-2 minutes (depends on your pan and heat of your stove)
Flip the crêpe using a spatula and cook the other side for an other 30s to 1min
Slide the crêpe onto a plate and repeat with the remaining batter, greasing the pan as needed
Serve crêpes immediately with your choice of fillings and toppings (or pile them up, let them cool down and cover them with foil to eat them later or next day)
💡 Nico's Tip
Some of my favorite toppings are cocoa powder, sugar, jam, chocolate syrup, maple syrup, Nutella... It goes with almost anything sweet!
