Chocolate Brownies
A rich and yummy chocolate brownies recipe, not too much on the chewy or cake side, a great in-between.

Ingredients
- •175g dark chocolate (~65%), chopped
- •150g butter
- •190g sugar
- •3 large eggs
- •1 egg yolk
- •95g wheat flour
- •25g cocoa powder
- •1 tsp vanilla extract
- •1 tsp instant coffee
- •1/2 tsp salt
- •75g chocolate chips (optional)
Instructions
Preheat oven to 175°C. Line a 20cm square tin with parchment paper.
Melt chocolate and butter together, stirring until smooth. Cool slightly.
Whisk sugar and instant coffee into chocolate mixture until combined.
Beat in whole eggs and egg yolk one at a time, then vanilla extract.
Sift flour, cocoa powder, baking powder, and salt together.
Fold dry ingredients into chocolate mixture until just combined - don't overmix.
Fold in chocolate chips if using. Pour into prepared tin.
Bake for 32-37 minutes until edges are set but center is slightly underdone.
Cool completely in tin before cutting. These improve after chilling overnight.
💡 Nico's Tip
While it's not a must-have, I really recommend the instant coffee in there. You won't directly taste it but it'll enhance how good your chocolate will flavor will be.
